Loukaniko (Greek - Appetizer) Recipe

Loukaniko is a traditional Greek sausage made with pork, flavored with herbs and spices such as orange peel, fennel seeds, and oregano. It is usually grilled and served as a flavorful appetizer.
Ingredients:
  • Pork - 1.1lb (500g)
  • Orange peel - 1 tsp
  • Fennel seeds - 1 tsp
  • Oregano - 2 tsp
  • Salt - 1 tsp
  • Black pepper - ½ tsp
  • Garlic powder - 1 tsp
  • Red wine - ¼ cup (60ml)
  • Olive oil - 2 tbsp
Instructions
  • In a large bowl, combine the pork, orange peel, fennel seeds, oregano, salt, black pepper, garlic powder, red wine, and olive oil. Mix well to ensure all the ingredients are evenly distributed and the pork is coated with the marinade.
  • Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight if possible. This will allow the flavors to meld together and marinate the pork.
  • Preheat the grill to medium-high heat.
  • Remove the marinated pork from the refrigerator and shape it into sausage links.
  • Place the sausage links on the preheated grill and cook for about 10-12 minutes, turning occasionally, until they are browned and cooked through.
  • Remove the Loukaniko sausages from the grill and let them rest for a couple of minutes before serving.
  • Serve the Loukaniko sausages as a flavorful appetizer. They can be enjoyed on their own or with a side of tzatziki sauce or Greek salad.
