Ingredients:
  • Semolina flour - 8.8 oz (250 g)
  • Plain yogurt - 8.8 oz (250 g)
  • Sugar - 7.1 oz (200 g)
  • Baking powder - 1 tsp
  • Lemon zest or rosewater - 1 tbsp
  • Eggs - 3
  • Salt - 1/4 tsp
  • Almonds (optional) - 1.8 oz (50 g)
  • Powdered sugar (optional) - As needed
Instructions
  • Preheat the oven to 180°C/350°F. Grease a baking dish.
  • Garnish with almonds or powdered sugar, if desired. Cut into squares and serve.
  • In a bowl, whisk together the semolina flour, sugar, baking powder, and salt.
  • In another bowl, beat the eggs until frothy. Add the plain yogurt and mix until smooth.
  • Add the dry ingredients to the wet mixture and mix until well combined. Stir in the lemon zest or rosewater.
  • Pour the batter into the greased dish and smooth the top with a spatula.
  • Bake for 25-30 minutes or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  • While the cake is baking, make the syrup. In a saucepan, combine the sugar, water, and lemon juice. Bring to a boil and then simmer for 5 minutes.
  • Remove the cake from the oven and let it cool for 5 minutes in the dish.
  • Pour the syrup over the cake, making sure it is evenly distributed. Let the cake cool completely before serving.
