Gemista (Greek - Main Course) Recipe

Tomatoes, peppers, or other vegetables stuffed with a mixture of rice, herbs, vegetables, and sometimes meat. Baked until tender, Gemista is a delightful vegetarian main course.
Ingredients:
  • Tomatoes - 10
  • Peppers - 10
  • Rice - 8.8 oz (1 cup)
  • Herbs - To taste
  • Vegetables - To taste
  • Meat - To taste
Instructions
  • Preheat the oven to 180°C (350°F).
  • Cut off the tops of the tomatoes and peppers, and remove the seeds and membranes.
  • In a bowl, combine the rice, herbs, vegetables, and meat (if using). Mix well to incorporate everything.
  • Stuff each tomato and pepper with the rice mixture.
  • Place the stuffed tomatoes and peppers in a baking dish.
  • Drizzle some olive oil over the vegetables.
  • Bake in the preheated oven for about 45 minutes to 1 hour, or until the vegetables are tender.
  • Serve the Gemista as a main course, either warm or at room temperature.
  • Note- The measurements for herbs, vegetables, and meat are subjective and should be adjusted according to personal preference. The baking time may also vary depending on the size of the vegetables and the specific oven.
